Ingredients

2 cups rolled oats

1 cup mixed nuts (finely chopped almonds, walnuts, and cashews)

1/2 cup seeds (a combination of pumpkin and sunflower seeds)

1/2 cup dried fruits (your choice of raisins, cranberries, or chopped apricots)

1/2 cup nut butter (choose either creamy peanut butter or smooth almond butter)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

A pinch of salt

Optional: 1/4 cup mini chocolate chips

Instructions

Prepare the Pan: Begin by lining an 8x8 inch baking dish with parchment paper, allowing excess paper to hang over the edges for easy removal afterward. This will help prevent the bars from sticking to the dish.

Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped mixed nuts, seeds, dried fruits, and a pinch of salt. Stir well with a spoon or spatula to ensure an even distribution of all ingredients.

Melt the Wet Ingredients: In a small saucepan over low heat, combine the nut butter with the honey (or maple syrup). Stir continuously for about 2-3 minutes until the mixture is smooth and fully melted. Once melted, remove from heat and stir in the vanilla extract until blended.

Combine the Mixtures: Pour the warm nut butter mixture over the bowl of dry ingredients. If you're using mini chocolate chips, now is the time to add them too. Mix thoroughly with a spatula or your hands until all the dry ingredients are completely coated in the sticky mixture.

Transfer to Pan: Carefully transfer the mixture to your prepared baking dish. Using a piece of parchment paper or the back of a spatula, press the mixture evenly and firmly into the pan. This step is essential to ensure the bars hold their shape once cut.

Chill and Set: Place the pan in the refrigerator and let it chill for at least 1-2 hours. Refrigerating the bars allows them to firm up, making them much easier to cut. For the best results, consider chilling for longer if time permits.

Cut and Serve: After the mixture has set, use the overhanging parchment paper to lift the entire block out of the pan. Place it on a cutting board and slice it into bars or squares to your desired size.

Store: Once cut, store the bars in an airtight container. They can be kept at room temperature for up to a week or refrigerated for up to two weeks to maintain freshness.

Prep Time: 15 minutes | Total Time: 3 hours | Servings: 12 bars

                    - Presentation Tips: For a delightful touch, drizzle some extra melted chocolate on top before chilling, or sprinkle a few extra chocolate chips for an appealing finish. Enjoy your nutritious snack on the go or as a wholesome dessert!
