4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and freshly cracked pepper, to taste

1 cup cherry tomatoes, halved

1 red bell pepper, sliced into thin strips

1 medium zucchini, sliced into half-moons

3 cloves fresh garlic, minced

1/2 cup low-sodium chicken broth

1 teaspoon balsamic vinegar

1 cup fresh basil leaves, torn into pieces

1 cup shredded mozzarella cheese

Instructions
 

Prep the Chicken: Start by seasoning the chicken breasts. Rub garlic powder, onion powder, Italian seasoning, and a generous pinch of salt and pepper over both sides of each breast to ensure they are evenly flavored.

    Sauté the Chicken: Heat the olive oil in a large skillet over medium heat. Once hot, add the seasoned chicken breasts. Cook for approximately 6-7 minutes on each side, or until they achieve a golden-brown crust and are no longer pink in the center. Once cooked, transfer the chicken to a plate and cover to keep warm.

      Cook the Vegetables: In the same skillet (with the leftover chicken juices), add the halved cherry tomatoes, sliced red bell pepper, zucchini, and minced garlic. Sauté for 4-5 minutes, stirring occasionally, until the vegetables begin to soften and the tomatoes release their juices.

        Deglaze the Skillet: Carefully pour the chicken broth and balsamic vinegar into the skillet. Use a wooden spoon to scrape up any flavorful browned bits stuck to the bottom. Bring the mixture to a gentle simmer so that the flavors can blend.

          Combine Chicken and Vegetables: Return the chicken to the skillet, nestling it in among the sautéed vegetables. Sprinkle the torn basil leaves on top, cover the skillet, and let it cook for an additional 2-3 minutes. This allows the flavors to meld and reheat the chicken.

            Add Cheese for the Finish: Remove the lid and evenly sprinkle the shredded mozzarella cheese over the chicken and vegetables. Cover the skillet again and allow the cheese to melt for about 2-3 minutes until it’s gooey and bubbly.
