1 cup shredded sharp cheddar cheese

4 large eggs

1/2 cup whole milk

1/4 cup finely chopped onion

1/4 cup all-purpose flour

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional, for added heat)

1 tablespoon fresh parsley, chopped (for garnish)

Preheat the oven: Start by preheating your oven to 375°F (190°C). While it's heating, prepare your mini muffin tin by greasing it with olive oil or non-stick cooking spray to ensure the quiche bites will easily release after baking.

    Prepare the zucchini: To prevent soggy quiche bites, place the shredded zucchini in a clean kitchen towel or cheesecloth. Squeeze out as much excess moisture as you can. Set the drained zucchini aside.

      Mix the wet ingredients: In a large mixing bowl, crack in the 4 eggs and pour in the whole milk. Whisk these together until the mixture is smooth and fully combined.
