1 lb ground turkey

1 tablespoon olive oil

1 small onion, finely diced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1/4 cup chicken broth (or water)

1 cup cherry tomatoes, quartered

1/2 cup black beans, rinsed and drained

1 avocado, diced

1/2 cup corn (frozen or canned)

1 cup shredded cheddar cheese (optional)

1 lime, cut into wedges

1 head of butter or romaine lettuce, leaves separated

Fresh cilantro, for garnish

Sauté the Base: Heat the olive oil in a large skillet over medium heat. Once the oil is shimmering, add the diced onion and sauté for about 3-4 minutes, or until the onions become translucent. Next, stir in the minced garlic and cook for another minute, just until fragrant.

    Cook the Turkey: Add the ground turkey to the skillet, using a spatula to break it into smaller pieces. Cook for approximately 6-8 minutes, stirring occasionally, until the turkey is browned and thoroughly cooked. If there is excess fat in the pan, carefully drain it.

      Season the Meat: Sprinkle in the cumin, chili powder, smoked paprika, and season with salt and pepper. Stir well to combine the spices with the turkey. Pour in the chicken broth (or water) and let it simmer for 2-3 minutes, allowing the flavors to blend beautifully.

        Prepare Toppings: While the turkey is cooking, prepare your toppings by chopping the cherry tomatoes, rinsing and draining the black beans, dicing the avocado, and measuring out the corn. Feel free to add any additional toppings or garnishes you desire.
