Ingredients

6 large eggs

1/2 cup roasted red peppers, finely chopped

1/4 cup crumbled feta cheese

1/4 cup shredded mozzarella cheese

1/4 cup milk

1 tablespoon olive oil

2 tablespoons fresh basil, chopped

Salt and pepper to taste

Cooking spray or oil for greasing the muffin tin

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C) to ensure it's hot enough to cook the egg bites evenly.

Prepare the Muffin Tin: Lightly coat a mini muffin tin with cooking spray or a small amount of olive oil. This will help the egg bites release easily after baking.

Whisk the Eggs: In a large mixing bowl, crack open all the eggs and whisk them together until the yolks and whites are well combined. Then, pour in the milk and olive oil, seasoning with salt and pepper. Mix thoroughly until smooth.

Incorporate Add-Ins: Gently fold in the finely chopped roasted red peppers, crumbled feta cheese, shredded mozzarella, and the freshly chopped basil. Ensure all ingredients are evenly distributed throughout the egg mixture.

Fill the Muffin Tin: Using a ladle or a measuring cup, carefully pour the egg mixture into each muffin cup of the prepared tin. Fill each cup about 3/4 full to allow room for the egg bites to rise as they bake.

Bake: Transfer the muffin tin to the preheated oven and bake for approximately 18-20 minutes. The egg bites are done when they are set in the middle and have a light golden color on top. You can check for doneness by inserting a toothpick into the center; it should come out clean.

Cool and Remove: After baking, let the egg bites cool in the tin for about 5 minutes. To remove them, gently run a small knife around the edges of each muffin cup to loosen, then carefully pop them out.

Serve: These mini egg bites are best enjoyed warm as a delightful breakfast or snack. They can be refrigerated for up to a week or frozen for longer storage, making them a convenient make-ahead option.
