1 cup egg whites (approximately 8 large eggs), room temperature

1 cup fresh spinach, finely chopped

1/2 cup cherry tomatoes, halved

1/4 cup feta cheese, crumbled

1/4 cup bell pepper, diced (any color for a pop of brightness)

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper, to taste

Cooking spray or a drizzle of olive oil for greasing the muffin tin

Preheat the Oven: Begin by preheating your oven to 350°F (175°C), allowing it to reach the desired temperature while you prepare the muffins.

    Prepare the Muffin Tin: Lightly coat a 12-cup muffin tin with cooking spray or a small amount of olive oil. This will create a non-stick surface, making it easy to remove the muffins once they’re baked.

      Whisk the Egg Whites: In a large mixing bowl, pour in the egg whites. Use a whisk or electric mixer to beat them until they become slightly frothy. This helps to incorporate air for a fluffier muffin.

        Add Seasonings: Sprinkle in the garlic powder, onion powder, and a pinch of salt and pepper. Mix everything together until the seasonings are evenly distributed throughout the egg whites.
