1 lb (450g) boneless, skinless chicken thighs or breasts, diced into bite-sized pieces

1/2 cup plain yogurt (preferably Greek for thickness)

2 tablespoons fresh lemon juice

2 tablespoons vegetable oil or ghee

1 tablespoon garam masala

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon turmeric powder

1/2 teaspoon chili powder (adjust according to your taste preference)

1 clove garlic, finely minced

1 inch piece of fresh ginger, grated

Salt and pepper to taste

8 small flour or corn tortillas

1 cup shredded lettuce, for crunch

1/2 cup ripe tomatoes, diced

1/2 cup cucumber, diced

1/4 cup red onion, thinly sliced

1/2 cup mint yogurt sauce (store-bought or homemade for freshness)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the plain yogurt, fresh lemon juice, vegetable oil, garam masala, cumin, coriander, turmeric, chili powder, minced garlic, grated ginger, and add salt and pepper to taste. Stir until well blended. Add the diced chicken to the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or for maximum flavor, overnight.

    Cook the Chicken: Preheat a non-stick skillet or grilling pan over medium-high heat. Once hot, add the marinated chicken to the skillet in a single layer. Cook for approximately 5-7 minutes, turning occasionally, until the chicken is cooked through and has developed a slightly charred exterior. The internal temperature should reach 165°F (75°C) for food safety.
