Mini Chicken Taco Crescent Rings

1 pound ground chicken

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 packet (1.25 oz) taco seasoning

1/2 cup water

1 cup shredded cheddar cheese

1 cup diced tomatoes (fresh or canned)

1/2 cup black beans, drained and rinsed

1 can (8 oz) refrigerated crescent roll dough

1 egg, beaten (for egg wash)

Optional toppings: sour cream, guacamole, chopped cilantro, sliced jalapeños

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until softened, approximately 3-4 minutes. Stir in the minced garlic, cooking for an additional minute until fragrant.

      Add Chicken and Seasoning: Add the ground chicken to the skillet. Using a spatula, break it apart while cooking until fully browned, about 6-8 minutes. Once browned, sprinkle in the taco seasoning and pour in the 1/2 cup of water. Let simmer for 3-4 minutes, allowing the sauce to thicken slightly.

        Combine Fillings: Remove the skillet from heat. Gently fold in the diced tomatoes and black beans into the chicken mixture. Allow it to cool for a few minutes before stirring in half of the shredded cheddar cheese.

          Prepare Crescent Dough: Unroll the refrigerated crescent roll dough onto a large baking sheet lined with parchment paper. Arrange the dough in a circular ring, ensuring that the triangles create a star shape, with the wider ends facing outward, resembling a sun.

            Fill with Chicken Mixture: Spoon the chicken mixture into the center of the crescent ring, spreading it evenly. Fold the wide ends of the dough over the filling towards the center, pinching the seams to seal.

              Add Cheese: Evenly sprinkle the remaining shredded cheddar cheese over the exposed filling.

                Brush with Egg Wash: Brush the outer crescent dough with the beaten egg. This will help achieve a beautiful golden-brown crust.

                  Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the crescent dough turns golden brown and is fully cooked.
