For the Tzatziki Sauce:

1 cup Greek yogurt

1 small cucumber, grated (with excess moisture squeezed out)

2 cloves garlic, minced

1 tablespoon extra virgin olive oil

1 tablespoon freshly squeezed lemon juice

Salt and fresh dill, to taste

For the Sliders:

8 mini pita breads

1 cup grape tomatoes, halved

1 small red onion, thinly sliced

1 cup shredded lettuce (such as romaine or iceberg)

Feta cheese, crumbled (optional for garnish)

Marinate the Chicken: In a spacious mixing bowl, whisk together the olive oil, Greek yogurt, lemon juice, minced garlic, oregano, paprika, salt, and pepper until well combined. Submerge the chicken thighs in the marinade, ensuring they are thoroughly coated. Cover the bowl with plastic wrap or a lid and marinate in the refrigerator for a minimum of 30 minutes, or up to 2 hours if time permits, to enhance the flavor.

    Prepare the Tzatziki Sauce: In a medium-sized bowl, mix the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and dill until well blended. Taste and adjust the seasoning if necessary. Cover with plastic wrap and let it chill in the refrigerator for at least 15 minutes while the chicken cooks. This will allow the flavors to meld beautifully.

      Cook the Chicken: Preheat a grill pan or skillet over medium-high heat. Once hot, remove the chicken from the marinade, letting any excess drip off, and place it on the grill or skillet.
