For the Chicken Fajita Filling:

1 lb boneless, skinless chicken breasts, thinly sliced

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1 red bell pepper, sliced into thin strips

1 green bell pepper, sliced into thin strips

1 small onion, sliced

Juice of 1 fresh lime

Fresh cilantro leaves for garnish

For the Taco Cones:

6 small flour tortillas

1 cup shredded cheddar cheese (or a cheese blend)

Cooking spray or olive oil for greasing

Your choice of dipping sauce (e.g., salsa, sour cream, or guacamole)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the olive oil, chili powder, ground cumin, garlic powder, onion powder, smoked paprika, and a pinch of salt and pepper. Add the thinly sliced chicken breasts to the bowl, ensuring they are well coated in the marinade. Cover and let it marinate for at least 20 minutes to allow the flavors to meld.

    Cook the Chicken & Vegetables: Heat a large skillet over medium heat and add the marinated chicken. Cook for 5-7 minutes until the chicken is fully cooked through and has a golden-brown color. Add the sliced red and green bell peppers as well as the onion to the skillet. Sauté for an additional 4-5 minutes until the vegetables are softened. Squeeze fresh lime juice over the mixture and toss in the chopped cilantro. Remove from heat and set aside.

      Prepare the Taco Cones: Preheat your oven to 375°F (190°C). Lightly grease a muffin tin with cooking spray or olive oil. Take each tortilla and gently fold it to form a cone shape, securing the base. Place each tortilla cone upright in the muffin tin to help it maintain its shape while baking. Repeat this process for all tortillas.

        Add Cheese: Inside each tortilla cone, sprinkle approximately 2 tablespoons of shredded cheddar cheese. Place the muffin tin in the preheated oven and bake for 5-7 minutes or until the tortillas are crispy and the cheese is melted.

          Fill the Cones: Remove the taco cones from the oven and allow them to cool slightly. Carefully fill each cone with the flavorful chicken fajita mixture.
