Ingredients

2 cans of young green jackfruit in water or brine (drained and rinsed)

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon salt

½ teaspoon black pepper

1 cup BBQ sauce (your favorite brand or homemade)

12 mini slider buns

1 cup coleslaw mix (for topping)

½ cup fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Jackfruit: Begin by tearing the drained jackfruit into smaller, bite-sized pieces using your hands or a fork, aiming for a texture that resembles pulled pork.

Cook the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes until it becomes translucent. Next, add the minced garlic and sauté for an additional minute until it becomes fragrant.

Add Spices: Stir in the smoked paprika, ground cumin, chili powder, salt, and black pepper into the skillet. Toast the spices in the pan for approximately one minute, stirring continuously to release their rich aromas.

Incorporate Jackfruit: Add the shredded jackfruit to the skillet, stirring thoroughly to coat the jackfruit with the aromatic spice mixture and sautéed onions.

Add BBQ Sauce: Pour in the BBQ sauce, making sure that all pieces of jackfruit are evenly coated. Reduce the heat to low, cover the skillet, and allow it to simmer for 15-20 minutes, stirring occasionally. This process will help the jackfruit become tender and absorb all the delicious flavors.

Assemble the Sliders: If desired, lightly toast the mini slider buns until golden brown. Once the jackfruit mixture is ready, generously spoon a portion onto the bottom half of each slider bun.

Top It Off: Add a handful of coleslaw mix over the BBQ jackfruit for an added crunch and texture. Finish by sprinkling fresh cilantro on top, then place the top bun over the coleslaw.

Serve: Arrange your sliders on a large platter and include lime wedges on the side for squeezing over the sliders. Serve warm and enjoy!
