1 teaspoon garlic powder

1 cup hummus (store-bought or homemade)

1 cup fresh spinach or arugula

1/2 cup crumbled feta cheese (optional)

Handful of black olives, sliced (optional)

Prep the Veggies: Begin by preheating your grill or grill pan over medium heat. In a large mixing bowl, combine the sliced zucchini, bell pepper, eggplant, halved cherry tomatoes, and thinly sliced red onion. Drizzle the olive oil over the vegetables, then sprinkle with dried oregano, garlic powder, salt, and pepper. Toss thoroughly until each piece is evenly coated.
