Maple Roasted Beets with Feta

4 medium-sized beets, thoroughly scrubbed and trimmed

2 tablespoons extra-virgin olive oil

2 tablespoons pure maple syrup

1 teaspoon balsamic vinegar

Salt and freshly ground black pepper, to taste

1/2 cup feta cheese, crumbled

1/4 cup walnuts, roughly chopped

Fresh parsley, finely chopped (for garnish)

Lemon wedges (for serving, optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to prepare for roasting.

    Prepare the Beets: Individually wrap each beet in aluminum foil, ensuring they are tightly sealed to retain moisture during roasting. Arrange the wrapped beets on a baking sheet and place them in the preheated oven. Roast for 45-60 minutes, or until they are fork-tender. Cooking time may vary depending on the size of the beets, so check for tenderness by using a fork.

      Cool and Peel: After roasting, remove the beets from the oven and let them cool for a few minutes. Carefully unwrap the foil, and wearing gloves to prevent staining your hands, peel the skins away from the beets. Slice the peeled beets into wedges for serving.

        Make the Maple Glaze: In a medium mixing bowl, combine the olive oil, maple syrup, balsamic vinegar, salt, and freshly ground black pepper. Whisk the mixture until it is well combined and smooth.

          Toss the Beets: In a large mixing bowl, combine the sliced beet wedges and drizzle the maple glaze over them. Gently toss the beets to ensure they are evenly coated with the glaze.

            Roast Again: Spread the glazed beet wedges out on a baking sheet in a single layer. Return them to the oven and roast for an additional 15-20 minutes, during which time the edges will caramelize to a beautiful golden brown.

              Serve: Once done, take the roasted beets out of the oven and transfer them to a serving platter. Evenly scatter the crumbled feta and chopped walnuts on top for added texture and flavor.
