Ingredients

1 whole turkey (12-14 lbs)

2 cups fresh mango puree (about 3 ripe mangos, blended until smooth)

1/2 cup honey

1/4 cup soy sauce

1 tablespoon freshly grated ginger

1 teaspoon ground cinnamon

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/4 cup olive oil

Fresh cilantro sprigs and lime wedges for garnish

Instructions

Prepare the Turkey:

    - If using a frozen turkey, be sure to thaw it completely in the refrigerator. Remove any giblets from the cavity, then use paper towels to pat the turkey dry. Generously season the inside and outside of the turkey with salt and freshly cracked pepper.

      Make the Mango Glaze:

        - In a medium saucepan set over medium heat, combine the mango puree, honey, soy sauce, grated ginger, ground cinnamon, garlic powder, and onion powder. Stir the mixture well and bring it to a gentle simmer. Cook for about 10 minutes, stirring occasionally, until the glaze thickens slightly. Once ready, remove from heat and set aside to cool.

          Marinate the Turkey:

            - Once your glaze has cooled to room temperature, divide it into two equal portions. Brush one portion generously over the turkey, ensuring it’s evenly coated for maximum flavor. Store the other half for basting later. For enhanced taste, let the turkey marinate in the refrigerator for at least 2 hours, though overnight is ideal for deeper flavor infusion.

              Preheat the Oven:

                - Preheat your oven to 325°F (160°C). Prepare a roasting pan by fitting it with a roasting rack to hold the turkey.

                  Roast the Turkey:

                    - Position the turkey breast-side up on the rack within the roasting pan. Drizzle olive oil over the turkey and use any remaining marinade for an extra layer of flavor. Loosely cover the turkey with aluminum foil to help keep it moist while it cooks and to prevent the skin from darkening too quickly.

                      Cooking Time:

                        - Roast the turkey in your preheated oven, basting it with the reserved glaze every 30 minutes. The estimated cooking time is between 2.5 to 3 hours, or until the internal temperature reaches 165°F (75°C) when checked at the thickest part of the breast and thigh.

                          Final Touch:

                            - During the last 30 minutes of cooking, remove the foil to allow the turkey skin to crisp to a beautiful golden brown. If desired, brush on additional mango glaze for extra flavor and a glossy finish.

                              Rest and Serve:

                                - After the turkey has finished roasting, remove it from the oven and allow it to rest for 15-20 minutes before carving. To serve, garnish with fresh cilantro sprigs and lime wedges for a bright, zesty touch. This turkey pairs wonderfully with seasonal sides such as fluffy rice, roasted vegetables, or a fresh garden salad.
