Ingredients

For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon vanilla extract

For the cheesecake filling:

2 (8 oz) packages cream cheese, softened at room temperature

¾ cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

1 cup fresh blueberries (frozen blueberries may be used as an alternative)

For the blueberry topping:

2 cups fresh blueberries

¼ cup granulated sugar

1 tablespoon cornstarch

1 tablespoon lemon juice

Instructions

Prepare the crust: Begin by preheating your oven to 325°F (163°C). In a medium mixing bowl, combine the graham cracker crumbs, melted butter, sugar, and vanilla extract. Stir until the mixture resembles wet sand and is well-combined. Press this mixture firmly and evenly into the bottom of a greased 9x13-inch baking pan. Bake the crust in the preheated oven for 10 minutes. Once done, remove it from the oven and let it cool slightly.

Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese and sugar together using an electric mixer on medium speed until the mixture is smooth and creamy. Add the vanilla extract and blend until fully incorporated. Next, add the eggs one at a time, mixing thoroughly after each addition to achieve a smooth batter. Gently fold in the sour cream until just combined, then add the fresh blueberries, folding them in carefully to avoid overly breaking them.

Assemble the bars: Pour the cheesecake filling over the cooled crust, using a spatula to spread it evenly. Place the baking pan back in the oven and bake for 35-40 minutes, or until the center is set but still has a slight jiggle when tapped. Allow the cheesecake to cool at room temperature for about 1 hour, then transfer it to the refrigerator and chill for at least 4 hours, or preferably overnight, to ensure it sets perfectly.

Prepare the blueberry topping: In a small saucepan over medium heat, combine the fresh blueberries, granulated sugar, cornstarch, and lemon juice. Stir gently as the mixture heats, cooking for about 5-7 minutes until the blueberries start to burst and the mixture thickens to a syrupy consistency. Once thickened, remove the saucepan from the heat and let the topping cool completely before spreading it over the chilled cheesecake bars.

Serve: Once the cheesecake has fully set and the topping has cooled, carefully cut the bars into squares. Serve chilled from the refrigerator to enjoy the delightful burst of fresh blueberry flavor in each bite!
