3 medium zucchinis, sliced lengthwise into thin strips

1 pound ground turkey or beef

1 small onion, finely diced

3 cloves garlic, minced

1 can (15 oz) crushed tomatoes

1 can (6 oz) tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional for added heat)

Salt and pepper to taste

2 cups ricotta cheese

1 large egg

2 cups shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish (optional)

Prepare the Zucchini: Preheat your oven to 375°F (190°C). Using a mandoline or a sharp knife, carefully slice the zucchinis lengthwise into thin strips. Lay them flat on paper towels and sprinkle lightly with salt. Allow the slices to sit for about 15 minutes to draw out excess moisture, which helps prevent sogginess in the lasagna.

    Cook the Meat Sauce: In a large skillet over medium heat, add the ground turkey or beef. Cook the meat until it's browned, breaking it into small pieces with a spatula. If there is excess fat, drain it off. Next, add the finely diced onion and sauté for 3-4 minutes until it becomes translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

      Add Tomatoes and Seasoning: Pour in the crushed tomatoes and tomato paste, followed by the oregano, basil, red pepper flakes (if using), salt, and pepper.               Bake: Cover the baking dish with aluminum foil to prevent the cheese from burning. Bake in the preheated oven for 25 minutes. After that, carefully remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and has turned a lovely golden brown.
