12 oz (340g) spaghetti or linguine

1 cup fresh ricotta cheese

Zest of 2 large lemons

Juice of 1 large lemon

1/2 cup grated Parmesan cheese

1/4 cup extra virgin olive oil

2 garlic cloves, finely minced

1/4 teaspoon red pepper flakes (optional for a kick)

Salt and freshly ground black pepper to taste

Fresh basil leaves, for garnish

Optional: Additional lemon zest for serving

Cook the Pasta: In a large pot, bring a generous amount of salted water to a rolling boil. Add the spaghetti or linguine and cook according to package instructions until al dente, usually around 8-10 minutes. Once cooked, be sure to reserve 1 cup of pasta water, then drain the rest and set the pasta aside.

    Prepare the Sauce: In a spacious mixing bowl, combine the fresh ricotta cheese, lemon zest, and lemon juice.
