Lemon Glazed Turkey

Ingredients
  

1 whole turkey (12-14 lbs)

1 cup unsalted butter, softened

Zest and juice of 3 large lemons

1/4 cup honey

1/4 cup Dijon mustard

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)

1 teaspoon garlic powder

1/2 teaspoon black pepper

2 cups low-sodium chicken broth

Salt to taste

Fresh lemon slices and thyme sprigs for garnish

Instructions
 

Preparation of Turkey:

    - Preheat your oven to 350°F (175°C).

      - Rinse the turkey under cold water and carefully pat it dry with paper towels. Don’t forget to check the cavity for giblets and remove them.

        Making the Lemon Glaze:

          - In a medium mixing bowl, combine the softened butter, lemon zest, lemon juice, honey, Dijon mustard, chopped thyme, chopped rosemary, garlic powder, and black pepper. Mix thoroughly until the mixture forms a smooth and well-blended paste.

            Applying the Glaze:

              - Gently slide your fingers underneath the skin of the turkey breast to loosen it, taking care not to tear the skin.

                - Rub half of the prepared lemon glaze under the skin, ensuring it is evenly distributed. Then, spread the remaining half generously all over the exterior of the turkey.

                  Preparing for Roasting:

                    - Position the turkey on a roasting rack set within a large roasting pan. Pour the chicken broth into the bottom of the pan, which will help keep the turkey moist during roasting.

                      - Season the cavity of the turkey with salt and any leftover herbs. For added flavor, place a few lemon slices and sprigs of thyme inside the cavity.

                        Roasting the Turkey:

                          - Loosely cover the turkey with aluminum foil to prevent excessive browning. Place the turkey in the preheated oven and roast for approximately 2.5 to 3 hours. The turkey is done when the internal temperature reaches 165°F (75°C) at the thickest part of the breast and thighs.

                            - In the final 30-45 minutes of cooking, remove the foil to allow the skin to become crispy and develop a beautiful golden brown color.

                              Basting:

                                - To keep your turkey moist and enhance the glaze, baste it with the pan juices every 30 minutes throughout the roasting process.

                                  Resting the Turkey:

                                    - Once your turkey has reached the appropriate temperature, remove it from the oven. Let it rest for at least 20-30 minutes before carving. Resting allows the juices to redistribute, resulting in a juicier and more flavorful turkey.

                                      Serving:

                                        - Carve the turkey and present it beautifully on a platter. Garnish with fresh lemon slices and sprigs of thyme for a vibrant touch. For extra flavor, drizzle some of the savory pan juices over the sliced turkey just before serving.
