2 salmon fillets (6 oz each)

2 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon soy sauce

1 tablespoon olive oil

Salt and black pepper to taste

Juice of 1 lemon

4 cups mixed greens (a blend of arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1 cucumber, thinly sliced

1/4 red onion, thinly sliced

1/4 cup crumbled feta cheese

1/2 avocado, sliced

3 tablespoons olive oil

1 tablespoon apple cider vinegar

1 tablespoon honey

1 teaspoon Dijon mustard

Prepare the Salmon Marinade:

    In a medium-sized bowl, whisk together the honey, Dijon mustard, soy sauce, olive oil, salt, pepper, and lemon juice until well combined. Reserve 1 tablespoon of this marinade in a separate dish for later use.

      Marinate the Salmon:
