Honey Garlic Chicken & Sweet Corn Fritters

For the Honey Garlic Chicken:

500g boneless chicken thighs, cut into bite-sized pieces

3 tablespoons honey

3 tablespoons soy sauce

2 cloves garlic, finely minced

1 teaspoon fresh ginger, grated

1 tablespoon vegetable oil

Salt and black pepper to taste

Toasted sesame seeds for garnish

Sliced green onions for garnish

For the Sweet Corn Fritters:

1 cup sweet corn kernels (canned or fresh)

1/2 cup all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon chili powder (optional for a spicy kick)

1/4 teaspoon salt

1/4 teaspoon black pepper

2 large eggs, lightly beaten

1/4 cup milk

2 tablespoons fresh cilantro, finely chopped

Vegetable oil for frying

Marinate the Chicken:

    In a medium-sized mixing bowl, whisk together the honey, soy sauce, minced garlic, grated ginger, and a pinch of salt and black pepper. Add the chopped chicken thighs to the bowl and stir until every piece is well coated in the marinade. Cover with plastic wrap and refrigerate for a minimum of 30 minutes to allow the flavors to meld.

      Prepare the Fritters:

        In a separate mixing bowl, combine the all-purpose flour, baking powder, chili powder (if using), salt, and black pepper. Stir until evenly mixed. In another bowl, whisk together the beaten eggs and milk. Gradually add the wet ingredients to the dry mixture, stirring until just combined. Carefully fold in the sweet corn and chopped cilantro, being cautious not to overmix.

          Cook the Chicken:

            Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the marinated chicken pieces to the skillet.
