1 cup fresh ricotta cheese

1 tablespoon extra virgin olive oil

1 teaspoon fresh lemon zest

1 teaspoon garlic powder

1 tablespoon chopped fresh basil

1 tablespoon chopped fresh chives

1 tablespoon chopped fresh oregano

Salt and freshly ground black pepper, to taste

1 cup cherry tomatoes, halved

1 large egg (for egg wash)

Flaky sea salt, for garnish

Fresh basil leaves, for garnish

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.

    Prepare the Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry until it is smooth. Using a sharp knife or pizza cutter, cut the pastry into 3-inch squares; you should have approximately 12 squares. Ensure that the edges are neat for a polished finish.

      Make the Ricotta Mixture: In a medium mixing bowl, combine the fresh ricotta cheese, extra virgin olive oil, lemon zest, garlic powder, and the chopped herbs (basil, chives, and oregano). Season with salt and freshly ground black pepper. Mix together until the mixture is creamy and well blended.

        Assemble the Galette Bites: Take one pastry square and place about 1 to 2 tablespoons of the herbed ricotta mixture in the center. Gently spread it, making sure to leave a small border of pastry around the edges. Top each filled square with several halved cherry tomatoes, cut side facing up.
