Ingredients

1.5 lbs flank steak, cut into bite-sized pieces

1 cup fresh parsley, finely chopped

1/2 cup fresh cilantro, finely chopped

4 garlic cloves, minced

1/2 teaspoon red pepper flakes (adjust according to spice preference)

1/4 cup red wine vinegar

1/2 cup extra virgin olive oil

1 teaspoon salt

1/2 teaspoon black pepper

Juice of 1 fresh lemon

Wooden skewers (optional)

Instructions

Marinate the Steak: In a large mixing bowl, combine the flank steak pieces with half of the prepared chimichurri sauce (as detailed in step 2). Toss the meat thoroughly to ensure each piece is well-coated with the sauce. Cover the bowl with plastic wrap or a lid and refrigerate for a minimum of 30 minutes, but for even richer flavor, marinate for up to 2 hours.

Prepare the Chimichurri Sauce: In a medium-sized bowl, whisk together the finely chopped parsley, cilantro, minced garlic, red pepper flakes, red wine vinegar, extra virgin olive oil, salt, black pepper, and freshly squeezed lemon juice. Mix until all ingredients are thoroughly combined and the sauce is smooth. Reserve half of this chimichurri sauce for serving later, and set aside the remainder to marinate the steak.

Cook the Steak Bites: Preheat your grill or grill pan to medium-high heat. If using wooden skewers, thread the marinated steak pieces onto them for easier handling (this step is optional). Grill the steak bites for about 2-3 minutes on each side, or until they reach your desired level of doneness—medium rare is recommended for flank steak to maintain its tenderness.

Allow to Rest: After grilling, transfer the steak bites to a plate and let them rest for a few minutes. This resting period is crucial as it allows the juices to redistribute within the meat, ensuring each bite remains juicy and succulent.

Serve: Arrange the grilled steak bites on a serving platter. Generously drizzle the reserved chimichurri sauce over the top for added flavor, and if you wish, garnish with extra fresh herbs for a vibrant look. Serve alongside lemon wedges for a refreshing zesty finish.

Prep Time: 15 minutes | Total Time: 1 hour (including marination) | Servings: 4
