1 cup red lentils, thoroughly rinsed

4 cups vegetable broth (homemade or store-bought)

1 medium onion, finely chopped

3 cloves garlic, minced

1-inch piece of fresh ginger, grated

2 cups fresh spinach, roughly chopped

1 large ripe tomato, diced

1 tablespoon curry powder

1 teaspoon ground turmeric

1 teaspoon ground cumin

1/2 teaspoon chili powder (adjust based on your spice preference)

2 tablespoons coconut oil (or a cooking oil of your choice)

Salt, to taste

Fresh cilantro leaves for garnish (optional)

Juice of half a fresh lemon

Heat the Oil: In a spacious pot, warm the coconut oil over medium heat. When the oil is shimmering, add the finely chopped onion and sauté for approximately 5 minutes until softened and translucent.
