1 cup pearl barley

4 cups vegetable broth

2 tablespoons olive oil

1 large onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 stalks celery, diced

1 bell pepper (red or yellow), chopped

1 medium zucchini, diced

1 cup green beans, trimmed and cut into 1-inch pieces

1 can (14 oz) diced tomatoes, including juice

1 teaspoon dried thyme

1 teaspoon dried oregano

1/2 teaspoon smoked paprika

Salt and pepper to taste

2 cups fresh spinach or kale, chopped

Fresh parsley or basil for garnish

Prepare the Barley: Begin by rinsing the pearl barley thoroughly under cold water to remove any impurities. In a large pot, bring the vegetable broth to a vigorous boil. Once boiling, add the rinsed barley. Lower the heat, cover the pot, and allow it to gently simmer for about 30 minutes, or until the barley is tender. Be sure to stir occasionally to prevent sticking.

    Sauté the Vegetables: While the barley cooks, heat 2 tablespoons of olive oil in a spacious saucepan over medium heat. Add the diced onion and minced garlic, sautéing for approximately 3–4 minutes, or until the onion becomes translucent and fragrant.
