Ingredients

1 pre-made pizza crust (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup crumbled feta cheese

1/2 cup roasted hatch green chiles, diced

1 medium red bell pepper, diced

1 small red onion, thinly sliced

1 cup fresh spinach, roughly chopped

1 cup cherry tomatoes, halved

4 large eggs

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Fresh cilantro or parsley, for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 450°F (232°C). If you are using a pizza stone, place it in the oven to heat thoroughly.

Sauté the Vegetables: In a medium skillet, heat the olive oil over medium heat. Add the thinly sliced red onion and diced red bell pepper. Sauté for approximately 3-4 minutes, stirring frequently, until the vegetables begin to soften. Add the roughly chopped spinach and cook until wilted, about 1-2 minutes. Season the mixture with garlic powder, onion powder, salt, and pepper to taste. Once done, remove the skillet from the heat.

Assemble the Pizza: On a pizza peel or a lightly greased baking sheet, lay down your pre-made pizza crust. Evenly distribute half of the shredded mozzarella over the crust as a base layer. Next, add the sautéed vegetable mixture, spreading it evenly. Top with the diced hatch green chiles and halved cherry tomatoes. Finish by sprinkling the remaining mozzarella and crumbled feta cheese over the entire pizza.

Create Wells for the Eggs: Using the back of a spoon, gently create four small wells in the topping mixture for the eggs, making sure they are evenly spaced. Crack one egg into each well, taking care not to break the yolks.

Bake the Pizza: Carefully transfer the assembled pizza into the preheated oven (or onto the pizza stone). Bake for 12-15 minutes, or until the egg whites are set and the yolks are still slightly runny, the cheese is melted, and the crust has turned a delightful golden brown.

Garnish and Serve: Once you remove the pizza from the oven, allow it to cool for a couple of minutes. If desired, garnish with freshly chopped cilantro or parsley for a burst of color and flavor. Slice the pizza into wedges and savor your spicy, savory breakfast delight!
