Ingredients

1 pound ground beef (preferably grass-fed)

1 cup hatch green chilies, roasted and diced (either fresh or canned)

1 cup long-grain white rice

2 cups beef broth

1 medium onion, chopped

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder (adjust to your preferred spice level)

1 cup corn (can be frozen or freshly cooked)

1 can (15 oz) diced tomatoes, drained

1/2 cup shredded cheddar cheese (optional for topping)

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Instructions

Heat the Skillet: In a large skillet over medium-high heat, pour in the olive oil. Once the oil is shimmering, add the chopped onion. Sauté for about 3-4 minutes, or until the onion becomes translucent and fragrant.

Brown the Beef: Add the ground beef to the skillet, using a wooden spoon to break it apart. Season generously with salt, pepper, cumin, smoked paprika, and chili powder. Cook for approximately 6-7 minutes, stirring occasionally, until the beef is evenly browned and no pink remains.

Add Garlic and Chilies: Stir in the minced garlic along with the diced hatch green chilies. Continue cooking for an additional 2 minutes, allowing the garlic to infuse its aroma into the skillet.

Stir in Rice: Incorporate the long-grain white rice into the mixture. Stir well to combine all the ingredients and toast the rice lightly for about 1-2 minutes, enhancing its flavor.

Combine Liquids: Carefully pour in the beef broth, then add the drained diced tomatoes and corn. Stir thoroughly, ensuring that the rice is submerged in the liquid for optimal cooking.

Simmer: Increase the heat and bring the mixture to a vigorous boil. Once boiling, reduce the heat to low, cover the skillet, and allow it to simmer for 18-20 minutes, or until the rice is tender and has absorbed most of the liquid.

Finish and Serve: After simmering, remove the skillet from heat. If desired, sprinkle shredded cheddar cheese on top. Cover the skillet for a few minutes to allow the cheese to melt beautifully. Finish by garnishing with fresh chopped cilantro for a burst of color and flavor.

Enjoy: Serve the hearty dish hot in bowls, savoring the delightful interplay of flavors from the beef, rice, and zesty hatch chilies!
