Ingredients

1 lb fresh, skinless salmon fillet, cut into 1-inch cubes

½ cup teriyaki sauce (choose your favorite store-bought or homemade)

2 tablespoons honey

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 tablespoon fresh ginger, grated for aromatic flavor

2 cloves garlic, minced finely

Salt and black pepper, to taste

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1 medium red onion, cut into wedges

1 cup cherry tomatoes, whole

Fresh cilantro leaves or toasted sesame seeds, for garnish

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes prior)

Instructions

Marinate the Salmon: In a mixing bowl, whisk together the teriyaki sauce, honey, rice vinegar, sesame oil, grated ginger, minced garlic, and a sprinkle of salt and black pepper. Set aside ¼ cup of this marinade to use later for basting. Add the salmon cubes to the bowl, ensuring they are thoroughly coated in the marinade. Cover the bowl and refrigerate for a minimum of 30 minutes. For a more intense flavor, you can marinate for up to 2 hours.

Prepare the Vegetables: While the salmon is marinating, take the time to wash and chop the bell peppers, onion, and cherry tomatoes into pieces that fit nicely on the skewers. This will not only aid in even cooking but also enhance the visual appeal when served.

Assemble the Skewers: After marinating, thread the salmon cubes and the prepped vegetables onto the skewers. For a vibrant presentation, alternate between salmon, red bell pepper, onion, green bell pepper, and cherry tomato. Feel free to arrange them in your preferred color pattern!

Preheat the Grill: Heat your grill to medium-high. To prevent the skewers from sticking, brush the grill grates lightly with oil before placing the skewers on.

Grill the Skewers: Carefully place the skewers on the grill. Grill for approximately 2-3 minutes on each side. Remember to brush the skewers with the reserved marinade each time you turn them. Avoid overcooking the salmon; it should be tender and flaky when done.

Serve: Once grilled to perfection, gently remove the skewers from the grill and place them onto a serving platter. For an added burst of flavor and color, garnish with fresh cilantro leaves or a sprinkle of toasted sesame seeds.

Enjoy: Serve your delectable Teriyaki Salmon Skewers alongside steamed jasmine rice or a crisp green salad for a complete, nutritious meal bursting with flavor.
