4 slices of whole wheat bread

1/2 cup cream cheese, softened to room temperature

1/4 cup honey or maple syrup (your choice for sweetness)

1 medium ripe banana, sliced

1/2 cup fresh strawberries, hulled and sliced

1/2 cup pineapple, diced into small pieces

1/4 cup blueberries, rinsed

1 tsp pure vanilla extract

1 tsp ground cinnamon

1 tbsp butter (for grilling)

Fresh mint leaves for garnish (optional)

Instructions
 

In a medium mixing bowl, combine the softened cream cheese with honey (or maple syrup), vanilla extract, and ground cinnamon. Use a hand mixer or a fork to blend until the mixture is smooth and creamy.

    Take each slice of whole wheat bread and spread a generous layer of the cream cheese mixture on one side. Make sure to cover the entire surface evenly for the best flavor.

      On two of the slices (the ones with cream cheese on top), evenly layer the banana slices, strawberry slices, diced pineapple, and blueberries. Make sure to distribute the fruit generously for a delicious bite every time.

        Place the other two slices of bread on top of the fruit-loaded slices, cream cheese side down, creating two complete sandwich melts.

          Heat a skillet or griddle over medium heat and add the butter. Allow the butter to melt and coat the bottom of the skillet.

            Carefully place the assembled sandwiches in the skillet. Grill each sandwich for about 3-4 minutes, pressing down gently with a spatula until golden brown and crispy. Flip the sandwiches carefully and grill the other side for an additional 3-4 minutes, until both sides are golden and the fruit is warm.

              Once both sides are evenly grilled and crispy, remove the sandwiches from the skillet using a spatula.
