2 ears of fresh corn, husked

1 medium red bell pepper, diced

1 small red onion, finely chopped

1 jalapeño, seeds removed and minced (adjust for heat preference)

1 cup cherry tomatoes, quartered

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 tsp ground cumin

Salt and pepper, to taste

12 small tortilla cups (store-bought or homemade)

Optional: avocado cream or guacamole for topping

Grill the Corn: Preheat your grill to medium-high heat. Once hot, place the husked corn directly onto the grill grates. Allow the corn to grill for approximately 10-12 minutes, turning occasionally until the kernels are charred and tender. Once done, remove the corn from the grill and set aside to cool.

    Prepare the Salsa: After the corn has cooled sufficiently to handle, use a sharp knife to carefully slice the kernels off the cob into a large mixing bowl. To this bowl, add the diced red bell pepper, finely chopped red onion, minced jalapeño, quartered cherry tomatoes, and freshly chopped cilantro.

      Season the Salsa: Drizzle the juice of 2 limes over the vegetable mixture. Sprinkle in the ground cumin along with salt and pepper to taste.
