Ingredients

For the Grilled Chicken:

4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon garlic powder

Salt and freshly ground pepper to taste

Juice of 1 lime

For the Street Corn Sauce:

2 cups fresh corn kernels (approximately 4 ears of corn)

1/4 cup mayonnaise

1/4 cup sour cream

1/2 cup crumbled cotija cheese

1 teaspoon smoked paprika

1 tablespoon lime juice

1/4 cup chopped fresh cilantro

Salt to taste

Instructions

Marinate the Chicken:

    - In a large bowl, mix together the olive oil, chili powder, ground cumin, garlic powder, lime juice, salt, and freshly ground pepper.

      - Add the chicken breasts to the bowl and toss well to ensure each piece is evenly coated with the marinade.

        - Cover and let the marinated chicken rest for at least 30 minutes at room temperature or refrigerate for up to 2 hours to enhance flavor.

          Prepare the Street Corn Sauce:

            - Heat a drizzle of oil in a medium skillet over medium-high heat.

              - Add the corn kernels and sauté for about 5-7 minutes, stirring occasionally until the corn caramelizes and develops a slightly charred flavor.

                - Once cooked, remove from heat and let the corn cool slightly.

                  Blend the Sauce:

                    - In a mixing bowl, combine the cooled corn, mayonnaise, sour cream, crumbled cotija cheese, smoked paprika, lime juice, chopped cilantro, and a pinch of salt.

                      - Use a fork or spatula to mix all ingredients thoroughly until well blended. Taste and adjust seasoning if needed. Set aside.

                        Grill the Chicken:

                          - Preheat your grill to medium-high heat.

                            - Remove the chicken breasts from the marinade and place them directly on the grill.

                              - Grill for about 6-7 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C), with beautiful grill marks.

                                Serve:

                                  - Once the chicken is fully cooked, transfer it to a cutting board and let it rest for a few minutes to lock in the juices.

                                    - Slice the chicken breasts into strips and arrange them on serving plates.

                                      - Generously drizzle the creamy street corn sauce over the top of the grilled chicken.

                                        - For an extra touch, garnish with additional cilantro and lime wedges on the side.

                                          Enjoy!

                                            - This delightful dish pairs beautifully with a side of grilled vegetables, fluffy rice, or a refreshing salad for a complete meal.
