Fresh cilantro is a key ingredient in peach salsa, bringing a burst of freshness and a fragrant aroma that elevates the dish. When selecting cilantro, look for bright green leaves without wilting or browning. Rinse the cilantro thoroughly to remove any dirt, and then chop it finely. The addition of cilantro not only enhances the flavor but also brings a vibrant green color to the salsa, making it visually appealing.

Ingredients

For the Grilled Chicken:

4 boneless, skinless chicken breasts

2 tablespoons extra-virgin olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and freshly ground pepper, to taste

Juice of 1 large lemon

For the Peach Salsa:

2 ripe peaches, diced into small cubes

1/2 medium red onion, finely chopped

1/4 cup fresh cilantro, roughly chopped

1 jalapeño, seeded and minced (adjust for your desired spice level)

Juice of 1 fresh lime

Sea salt, to taste

Instructions

Marinate the Chicken:

    - In a large mixing bowl, whisk together the olive oil, smoked paprika, garlic powder, onion powder, dried oregano, salt, pepper, and lemon juice until well combined.

      - Add the chicken breasts to the bowl, ensuring they are fully coated in the marinade. For best results, massage the marinade into the chicken.

        - Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes, allowing the chicken to absorb the flavors. For enhanced taste, marinate for up to 2 hours.

          Prepare the Peach Salsa:

            - In a separate medium bowl, combine the diced peaches, finely chopped red onion, chopped cilantro, minced jalapeño (if desired), lime juice, and a pinch of sea salt.

              - Stir the mixture gently to combine all the ingredients. Allow it to sit at room temperature for at least 15 minutes, which helps the flavors blend beautifully.

                Grill the Chicken:

                  - Preheat your grill to medium-high heat (about 375-450°F or 190-230°C).

                    - Remove the chicken breasts from the marinade, letting any excess drip off, and discard the remaining marinade.

                      - Place the chicken on the grill grates. Grill for about 6-7 minutes on each side, or until the chicken is fully cooked through, with an internal temperature of 165°F (75°C) and showcasing attractive grill marks.

                        - Once cooked, transfer the chicken off the grill and let it rest on a cutting board for about 5 minutes to retain its juices.

                          Serve:

                            - Slice the grilled chicken breasts into strips and generously top with the peach salsa.

                              - Serve immediately with your choice of sides, such as fluffy quinoa or vibrant grilled vegetables for a delightful meal.

                                Prep Time: 15 minutes | Total Time: 1 hour 15 minutes | Servings: 4
