Ingredients

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

2 ripe peaches, pitted and cut into wedges

1 red bell pepper, cut into 1-inch pieces

1 small red onion, cut into wedges

1/4 cup olive oil

2 tablespoons honey

2 tablespoons balsamic vinegar

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper, to taste

Skewers (if using wooden skewers, soak them in water for at least 30 minutes)

Instructions

Marinate the Chicken: In a large mixing bowl, combine the olive oil, honey, balsamic vinegar, minced garlic, dried thyme, paprika, salt, and pepper. Whisk together until well blended. Add the cubed chicken and stir until each piece is thoroughly coated with the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, allowing the flavors to infuse the chicken. For a deeper flavor, marinate for up to 2 hours.

Prepare the Skewers: While the chicken is marinating, prepare your skewers. If you are using wooden skewers, ensure they have been soaked in water for at least 30 minutes to prevent them from burning on the grill.

Assemble the Skewers: Once the chicken has finished marinating, it's time to assemble the skewers. Thread the chicken cubes onto the skewers, alternating with the peach wedges, bell pepper pieces, and red onion wedges. This will create a vibrant and colorful presentation that is pleasing to the eye.

Preheat the Grill: Preheat your grill to medium-high heat, approximately 400°F (200°C). This temperature will help achieve the perfect char while keeping the chicken juicy.

Grill the Skewers: Place the assembled skewers on the preheated grill. Cook for about 10 to 12 minutes, turning them occasionally to ensure even cooking. The chicken should be fully cooked, reaching an internal temperature of 165°F (75°C) and should display lovely grill marks. The peach wedges should become soft and develop a light charring.

Serve: Once grilled to perfection, remove the skewers from the grill and allow them to rest for a few minutes. This resting period will help retain the juices in the chicken. Serve warm, optionally drizzled with any leftover marinade that has been heated to a safe temperature or garnished with a sprinkle of fresh herbs for added freshness.

Presentation Tips: To enhance the visual appeal, consider serving the skewers on a large platter lined with fresh parsley or arugula, and arrange them attractively. You can also include lemon wedges on the side for an extra splash of color and a burst of freshness when squeezed over the skewers prior to eating.
