Grilled Chicken & Corn Caesar Salad

Ingredients
  

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

½ teaspoon smoked paprika

Salt and pepper to taste

4 cups Romaine lettuce, chopped

1 cup cherry tomatoes, halved

1 cup corn kernels (freshly grilled or canned and drained)

½ cup freshly grated Parmesan cheese, plus extra for topping

¼ cup Caesar dressing (store-bought or homemade)

¼ cup croutons (optional)

Fresh parsley, finely chopped (for garnish)

Instructions
 

Prepare the Chicken: In a small bowl, combine the olive oil, garlic powder, smoked paprika, salt, and pepper to create a marinade. Rub this flavorful mixture evenly over both chicken breasts, ensuring they're well coated.

    Grill the Chicken: Preheat your grill to medium-high heat. Once the grill is hot, place the chicken breasts on the grill and cook for approximately 6-7 minutes on each side. The chicken is done when it reaches an internal temperature of 165°F (75°C). After grilling, remove the chicken and let it rest for about 5 minutes to allow the juices to redistribute.

      Cook the Corn: If using fresh corn, grill the corn on the cob for around 10 minutes, turning occasionally until tender and slightly charred. If using canned corn, simply drain and rinse it before incorporating it into the salad.

        Combine the Salad Ingredients: In a large salad bowl, toss together the chopped Romaine lettuce, halved cherry tomatoes, corn kernels, and half of the grated Parmesan cheese until evenly mixed.

          Slice the Chicken: Once the chicken has rested, slice it into strips. Arrange the chicken slices on top of the salad mixture.

            Dress the Salad: Drizzle Caesar dressing over the salad, then gently toss the salad to ensure all ingredients are nicely coated with the dressing.

              Serve: Finish by sprinkling the remaining Parmesan cheese, croutons (if desired), and freshly chopped parsley on top as a garnish. Serve the salad immediately for the best flavor and texture!
