4 ears of fresh sweet corn, husked

3 tablespoons extra virgin olive oil

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and freshly cracked black pepper, to taste

1 tablespoon fresh lime juice

½ cup fresh cilantro, finely chopped

8 small corn tortillas

1 ripe avocado, sliced

½ cup crumbled feta cheese (optional)

Lime wedges, for serving

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to prepare for roasting the corn.

    Prepare the Corn: On a baking sheet lined with parchment paper, place the husked sweet corn. Drizzle it generously with olive oil, then add the minced garlic, smoked paprika, cumin, chili powder, and season with salt and freshly cracked pepper. Toss the corn cobs gently, ensuring they are coated evenly with the mixture.

      Roast the Corn: Place the baking sheet in the preheated oven and roast the corn for approximately 25-30 minutes. Make sure to turn the corn cobs halfway through the roasting time to achieve an even char. The corn should be tender and have a slight charred appearance when ready.
