2 cups fresh strawberries, hulled and sliced

1 cup plain Greek yogurt (or your preferred non-dairy alternative)

1/4 cup honey or maple syrup (adjust to your desired sweetness)

1 teaspoon vanilla extract

1 cup rolled oats

1/2 cup milk (dairy or plant-based)

A pinch of salt

Optional toppings: chopped nuts, shredded coconut, or mini chocolate chips

Prepare the Strawberries: In a blender or food processor, combine the hulled and sliced strawberries with honey (or maple syrup). Blend the mixture until smooth, but feel free to leave some small chunks of strawberry for added texture.

    Mix the Yogurt Base: In a medium mixing bowl, thoroughly combine the Greek yogurt, vanilla extract, rolled oats, milk, and a pinch of salt. Stir until you achieve a smooth consistency with the oats evenly distributed throughout the mixture.

      Layer the Ingredients: Grab your popsicle molds and begin layering the ingredients. Spoon a layer of the yogurt mixture into each mold. Then, add a layer of the strawberry mixture. Repeat this layering process until the molds are filled, ensuring to finish with the strawberry mix on top for a vibrant look.

        Insert Sticks: If your popsicle molds have built-in sticks, insert them at this stage. If not, freeze the pops for about 45 minutes first, then carefully insert wooden sticks into the semi-frozen pops to help maintain their shape.
