Ingredients

2 cups fresh strawberries, hulled and halved

1/2 cup granulated sugar (adjust based on your sweetness preference)

1 cup freshly squeezed lemon juice (approximately 4-6 lemons)

1 cup plain or vanilla Greek yogurt

1 cup coconut water (or regular water)

1 teaspoon vanilla extract

Lemon zest (from 1 lemon, for garnish)

Fresh mint leaves (for garnish)

Optional: 1-2 tablespoons honey (for additional sweetness)

Instructions

Prepare the Strawberries: In a medium mixing bowl, combine the hulled and halved strawberries with half of the granulated sugar. Allow the mixture to sit for about 15 minutes. This process, known as maceration, helps release the natural juices of the strawberries. For a more textured result, feel free to mash the strawberries lightly with a fork after the resting period.

Make the Lemonade Base: In a large mixing bowl, whisk together the freshly squeezed lemon juice, the remaining granulated sugar (or honey if you prefer), Greek yogurt, and coconut water. Continue whisking until the mixture is fully combined and smooth. Taste and adjust the sweetness to your liking by adding more honey or sugar as needed.

Combine Strawberry Mixture: Gently fold the macerated strawberries into the lemonade mixture. Use a spatula to ensure an even distribution of strawberries throughout the mixture without breaking them apart too much.

Pour into Cups: Spoon the vibrant strawberry-lemonade mixture into small cups or silicone molds. Fill them about three-quarters full, leaving some space at the top to allow for expansion as the mixture freezes.

Freeze: Cover the cups tightly with plastic wrap or aluminum foil to prevent freezer burn. Place them in the freezer and allow them to freeze for at least 4 to 6 hours, or until they are completely solid.

Prepare to Serve: Once the cups are thoroughly frozen, remove them from the freezer and let them sit at room temperature for about 5 minutes. This step will soften the frozen mixture slightly, making it easier to scoop.

Garnish and Enjoy: Before serving, add a sprinkle of fresh lemon zest atop each frozen yogurt lemonade cup for an aromatic touch, and garnish with a sprig of fresh mint. Serve immediately to enjoy the refreshing flavors reminiscent of summer!
