Ingredients

1 cup Greek yogurt

1 cup full-fat canned coconut milk (for extra creaminess)

1/2 cup honey or maple syrup

Zest of 2 fresh lemons

Juice of 2 fresh lemons

1 teaspoon pure vanilla extract

1 cup unsweetened shredded coconut

1/2 cup graham cracker crumbs

2 tablespoons melted coconut oil

Pinch of salt

Instructions

Prepare the crust: In a medium bowl, mix together the graham cracker crumbs, melted coconut oil, and a pinch of salt. Stir until the mixture is well combined and resembles wet sand. Firmly press this mixture into the bottom of a lined 8x8-inch baking dish, ensuring an even layer. Set aside.

Make the yogurt filling: In a large mixing bowl, use a whisk to combine the Greek yogurt, full-fat coconut milk, honey (or maple syrup), lemon zest, lemon juice, and vanilla extract. Whisk until the mixture is smooth, creamy, and well blended.

Fold in coconut: Gently fold the shredded coconut into the yogurt mixture, ensuring it is evenly distributed without overmixing.

Add the filling: Carefully pour the coconut-yogurt mixture over the prepared graham cracker crust in the baking dish. Use a spatula to spread it out evenly across the crust.

Freeze the bars: Cover the dish tightly with plastic wrap, then place it in the freezer for at least 4-6 hours, or until the mixture has completely frozen solid.

Serve the bars: Once frozen, remove the dish from the freezer and let it sit at room temperature for about 5-10 minutes to soften slightly for easier slicing. Cut into squares and serve right away, or store any leftovers in the freezer for up to one week.

Optional garnish: For a beautiful presentation, sprinkle toasted coconut flakes or additional lemon zest on top of the bars just before serving.
