Ingredients

1 cup fresh or frozen blueberries

2 cups plain Greek yogurt

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

2 cups mini muffin mix (store-bought or homemade)

1/4 cup almond flour (optional, for added texture)

1/4 cup chopped nuts (walnuts or pecans, optional)

1/4 cup mini chocolate chips (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a mini muffin pan by lining it with paper liners or lightly greasing each muffin compartment with cooking spray to prevent sticking.

Prepare the Muffin Batter: In a large mixing bowl, combine the mini muffin mix, almond flour (if using), and ground cinnamon. Whisk the dry ingredients together until they are evenly blended.

Make the Yogurt Mixture: In a separate bowl, whisk together the Greek yogurt, honey (or maple syrup), and vanilla extract until the mixture is smooth and thoroughly combined. This will be the creamy topping for your muffins.

Combine the Mixtures: Gently fold the fresh or frozen blueberries into the muffin batter, taking care not to smash them. If using, add in the chopped nuts and mini chocolate chips, folding these in until evenly distributed.

Fill the Muffin Pan: Using a spoon or a small ice cream scoop, fill each compartment of the prepared mini muffin pan about 2/3 full with the muffin batter. Afterward, top each muffin with a generous dollop of the yogurt mixture, using a spoon or piping bag for a tidy finish.

Bake the Muffins: Carefully place the muffin pan in the preheated oven and bake for approximately 12-15 minutes. The muffins should be golden brown, and a toothpick inserted into the center should come out clean or with a few moist crumbs.

Cool and Freeze: After baking, let the muffin bites cool in the pan for about 10 minutes. Then, transfer them to a wire rack to cool completely. Once cooled, arrange the muffin bites on a baking sheet and place them in the freezer for at least 2 hours until solid.

Serve: When ready to enjoy, remove the frozen muffin bites from the freezer. They can be eaten straight away or kept in an airtight container in the freezer for up to a month as a delightful snack or dessert!
