Ingredients

For the Crust:

1 cup graham cracker crumbs

3 tablespoons melted butter

2 tablespoons granulated sugar

For the Cheesecake Filling:

1 cup plain Greek yogurt

8 oz cream cheese, softened to room temperature

1/2 cup granulated sugar

1 teaspoon pure vanilla extract

1/2 cup mixed berries (blueberries, raspberries, strawberries), chopped into small pieces

For the Topping:

Additional mixed berries for garnish

Drizzle of honey or maple syrup (optional)

Instructions

Prepare the Crust:

In a medium mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix well until the crumbs are fully coated with the butter and the texture resembles damp sand.

      Press the Crust:

Line a mini muffin tin with paper liners for easy serving. Distribute the crumb mixture evenly into the bottom of each liner. Use your fingers or a small measuring cup to press down firmly on the crumbs, creating a compact and even crust.

          Make the Filling:

In a large mixing bowl, use an electric mixer to beat the softened cream cheese until it is smooth and creamy. Add in the Greek yogurt, granulated sugar, and vanilla extract. Continue to beat until the mixture is well-combined and fluffy. Carefully fold in the chopped mixed berries with a spatula, ensuring they are evenly dispersed.

              Fill the Bites:

Spoon the cheesecake filling over the prepared crusts in each mini muffin liner, filling them almost to the top. Use the back of a spoon to smooth the surface of each bite.

                  Freeze the Bites:

Place the filled muffin tin into the freezer and freeze for at least 3-4 hours, or until the cheesecake bites are completely firm and solid.

                      Serve:

Once the bites are frozen, gently remove them from the muffin tin by peeling away the liners. Arrange the cheesecake bites on a serving plate. Garnish with additional mixed berries on top, and drizzle with honey or maple syrup if desired for added sweetness.

                          Enjoy:

Serve these delightful Frozen Yogurt Berry Cheesecake Bites immediately for a refreshing and indulgent treat!
