Ingredients

2 cups fresh strawberries, hulled and sliced

1/4 cup granulated sugar (divided)

1 cup heavy whipping cream

1 cup plain or vanilla Greek yogurt

1 teaspoon pure vanilla extract

1 tablespoon freshly squeezed lemon juice

1 cup graham cracker crumbs

1/2 cup unsalted butter, melted

Pinch of fine salt

Instructions

Prepare the Strawberries: In a medium-sized mixing bowl, combine the sliced strawberries with 2 tablespoons of granulated sugar. Stir gently to coat the strawberries, then let the mixture sit for about 15 minutes. This process, known as macerating, will allow the strawberries to release their natural juices while becoming sweeter.

Make the Crust: In a separate bowl, combine the graham cracker crumbs, melted butter, and a pinch of salt. Mix well until the crumbs are thoroughly coated. Press this mixture firmly and evenly into the bottom of a 9x9-inch baking dish to form a solid crust. Ensure it's packed tightly for a sturdy base.

Whip the Cream: In a large mixing bowl, use an electric mixer to beat the heavy whipping cream on medium speed until soft peaks form (this usually takes about 2-3 minutes). Gradually add the remaining 2 tablespoons of sugar, Greek yogurt, vanilla extract, and lemon juice. Continue to whip until all ingredients are fully combined and the mixture has thickened to a creamy consistency.

Layer the Ingredients: Spread half of the whipped cream mixture evenly over the graham cracker crust, smoothing it out with a spatula. Next, layer the macerated strawberries atop the whipped cream layer, spreading them out evenly. Finally, spoon the remaining whipped cream mixture over the strawberries and gently spread it out until even.

Freeze: Cover the baking dish tightly with plastic wrap and place it in the freezer. Allow it to freeze for at least 4 hours, or until it is solidly set.

Serve: Once frozen, remove the dish from the freezer and let it sit at room temperature for about 5-10 minutes. This will make cutting easier. Use a sharp knife to slice the dessert into bars and serve immediately. Delight in the frosty, fruity goodness!
