1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons granulated sugar

1 cup cream cheese, softened to room temperature

½ cup powdered sugar, sifted

1 teaspoon pure vanilla extract

1 cup heavy whipping cream, chilled

1 ½ cups frozen strawberries, thawed and diced

¼ cup strawberry jam (optional, for added sweetness)

Fresh strawberries, halved or sliced, for garnish (optional)

Instructions
 

Prepare the crust: In a large mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix well until all the crumbs are fully coated in butter. Firmly press this mixture into the bottoms of a silicone mini muffin tray or a traditional muffin tray lined with paper liners. Place the tray in the freezer while you prepare the cheesecake filling.

    Make the cheesecake filling: In another large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy with no lumps. Gradually add in the sifted powdered sugar and vanilla extract, continuing to beat until the mixture is completely combined and light.

      Whip the cream: In a separate, chilled bowl, whip the heavy whipping cream using an electric mixer on high speed until stiff peaks form. This means that when you lift the beaters, the cream stands upright and doesn't droop. Carefully fold the whipped cream into the cream cheese mixture using a spatula, taking care not to deflate the whipped cream.

        Incorporate strawberries: Gently fold in the diced strawberries, ensuring they are evenly distributed throughout the cheesecake mixture. If you'd like a more intense strawberry flavor, you can also fold in the optional strawberry jam at this stage.

          Fill the crusts: Remove the graham cracker crusts from the freezer. Using a spoon or small spatula, fill each crust with the cheesecake mixture, making sure to reach the top. Smooth the tops gently with a spatula if needed.

            Freeze the bites: Return the filled tray to the freezer and allow it to set for at least 4 hours, or until the cheesecake bites are firm and fully set.
