2 ½ cups fresh or frozen strawberries, hulled and sliced

1 cup Greek yogurt (choose plain or vanilla based on your preference)

1/3 cup honey or maple syrup (adjust according to your desired sweetness)

1 tablespoon fresh lemon juice

1 teaspoon pure vanilla extract

A pinch of salt

1/2 cup granola (optional, for a delightful topping)

Prepare the Strawberries: If you're using fresh strawberries, start by washing and hulling them. If you have frozen strawberries, allow them to thaw for about 10-15 minutes to make blending easier.

    Blend the Mixture: In a powerful blender or food processor, combine the sliced strawberries, Greek yogurt, honey or maple syrup, lemon juice, vanilla extract, and a pinch of salt. Blend this mixture until it’s completely smooth. If you enjoy a little texture, feel free to leave some small chunks of strawberries intact.

      Taste and Adjust: After blending, pause to taste the mixture. If you find it needs an extra touch of sweetness, add more honey or maple syrup, blending briefly to combine.

        Prepare the Mold: Take an 8x8-inch baking dish or a silicone mold and line it with parchment paper, letting some paper hang over the edges. This will make it easier to lift the bars out later.
