Ingredients

2 cups full-fat coconut milk (for maximum creaminess)

1 cup freshly squeezed pineapple juice (or store-bought if unavailable)

1/2 cup shredded unsweetened coconut

1/4 cup honey or maple syrup (adjust based on your preferred sweetness)

1 teaspoon pure vanilla extract

1/2 teaspoon almond extract

1 cup chopped fresh pineapple (for additional garnish)

Fresh mint leaves (for garnish)

Optional: 1/4 cup chopped macadamia nuts (for added crunch)

Instructions

Mix the Base: In a large mixing bowl, combine the full-fat coconut milk and freshly squeezed pineapple juice. Use a whisk to blend the ingredients together until fully combined and smooth.

Add Sweetness: Stir in the honey (or maple syrup), vanilla extract, and almond extract. Taste the mixture and adjust the sweetness by adding more honey or syrup as desired.

Incorporate Coconut: Gently fold in the shredded unsweetened coconut. Ensure it is evenly distributed throughout the coconut-pineapple mixture.

Prepare the Molds: Select silicone muffin cups or small paper cups for the dessert. Carefully pour the coconut-pineapple mixture into each cup, filling them about three-quarters full to allow room for expansion during freezing.

Freeze: Arrange the filled cups in the freezer and allow them to freeze for about 4 to 6 hours, or until they are completely solidified.

Garnish and Serve: Once the cups are frozen, gently remove them from the molds. If using paper cups, peel them away carefully. Top each tropical cup with a scoop of chopped fresh pineapple, a sprinkle of chopped macadamia nuts (if desired), and a mint leaf for a refreshing touch.

Enjoy: Serve the Tropical Paradise Cups immediately for a delightful and refreshing treat! For that extra fluffy texture, use a fork to lightly scrape the surface before serving.
