Ingredients

2 ripe bananas

1/2 cup creamy peanut butter

1/4 cup honey or maple syrup

1/2 cup unsweetened cocoa powder

1 cup crushed peanuts (choose salted or unsalted based on your preference)

1 cup dark chocolate chips (or substitute with milk chocolate chips)

Sea salt, for sprinkling

Instructions

Prepare the Bananas: Begin by peeling the ripe bananas and slicing them into rounds approximately 1/2 inch thick. Arrange these banana slices in a single layer on a baking sheet lined with parchment paper.

Make the Caramel Mixture: In a medium mixing bowl, combine the creamy peanut butter and honey (or maple syrup). Stir thoroughly until the mixture is smooth and creamy. This delightful blend will act as the “caramel” layer for your bites.

Assemble the Bites: Take a spoon and dollop roughly 1 teaspoon of the peanut butter mixture onto half of the banana slices. Place the remaining banana slices atop these dollops, creating small sandwiches.

Coat with Cocoa: In a separate bowl, pour in the unsweetened cocoa powder. Carefully roll each banana sandwich in the cocoa powder, ensuring each side is well coated. This adds a rich, chocolaty layer that complements the dipped chocolate.

Freeze the Banana Sandwiches: Return the assembled banana bites to the parchment-lined baking sheet and freeze them for about 1-2 hours, or until they are solidly firm.

Melt the Chocolate: While waiting for the bites to freeze, melt the dark chocolate chips. Place them in a microwave-safe bowl and microwave in 30-second increments, stirring after each interval until the chocolate is completely smooth and melted.

Dunk and Coat: Once the frozen banana bites are ready, take them out of the freezer. Carefully dip each one into the melted chocolate, ensuring they are fully covered. Let any excess chocolate drip off back into the bowl.

Add Crushed Peanuts: Immediately after coating, sprinkle crushed peanuts on top of each chocolate-covered banana bite while the chocolate is still wet. This will impart that delightful crunch reminiscent of a Snickers bar.

Final Freeze: Place the chocolate-coated bites back onto the parchment-lined baking sheet. Add a delicate sprinkle of sea salt over each bite, then return them to the freezer for an additional 30 minutes to allow the chocolate to set.

Serve: Once set, enjoy your Frozen Banana Snickers Bites straight from the freezer for a deliciously healthy treat!
