Ingredients

4 ripe bananas

1 cup creamy peanut butter

1 cup Greek yogurt (or a dairy-free equivalent)

2 tablespoons honey (or maple syrup for a vegan option)

1 teaspoon pure vanilla extract

¼ teaspoon sea salt

½ cup dark chocolate chips (optional, for a chocolate drizzle)

2 tablespoons coconut oil (optional, for melting chocolate)

Instructions

Prepare the Banana Mixture: In a high-speed blender or a food processor, add the ripe bananas, creamy peanut butter, Greek yogurt, honey (or maple syrup), pure vanilla extract, and sea salt. Blend on high until the mixture is completely smooth and creamy, stopping to scrape down the sides as necessary for even blending.

Melt the Chocolate (Optional): If you decide to include the chocolate drizzle, place the dark chocolate chips in a microwave-safe bowl. Add the coconut oil and heat in the microwave in 30-second intervals, stirring in between, until the chocolate is fully melted, smooth, and glossy. Alternatively, you can melt the chocolate in a double boiler on the stove.

Prepare the Ice Pop Molds: If you choose to layer chocolate, pour a small amount of the melted chocolate at the bottom of each ice pop mold, using a small spoon to evenly distribute it. Gently shake the molds to ensure the chocolate settles into a nice layer.

Fill the Molds: Carefully pour the banana and peanut butter mixture into the prepared ice pop molds, leaving a small gap at the top to allow for expansion as they freeze. If desired, drop in small chunks of banana or swirl in additional melted chocolate for extra flavor and texture.

Insert Sticks and Freeze: Place the ice pop sticks into the molds, making sure they are centered. Transfer the molds to the freezer and freeze for at least 4 to 6 hours, or until the pops are completely firm and ready to be enjoyed.

Unmold and Enjoy: To easily remove the ice pops, hold the molds under warm water for a few seconds until they loosen. Gently pull the pops out of the molds and indulge in your refreshing Choco-Banana Bliss Ice Pops!
