12 oz (340g) spaghetti or linguine pasta

2 cups cherry tomatoes, halved

1 ripe avocado, diced into cubes

3 cloves garlic, finely minced

1/4 cup fresh basil leaves, coarsely chopped

1/4 cup extra virgin olive oil

1 tablespoon balsamic vinegar

1 teaspoon red pepper flakes (optional, for a spicy kick)

Salt and freshly ground black pepper, to taste

Grated Parmesan cheese, for serving

Additional basil leaves for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to the package directions until al dente. Before draining, reserve 1 cup of the pasta water, then drain the pasta and set it aside.

    Sauté the Garlic: In a spacious skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 1-2 minutes, stirring frequently, until it becomes fragrant and turns a light golden color. Take care not to let the garlic burn as it can impart a bitter taste.

      Add Tomatoes: Incorporate the halved cherry tomatoes into the skillet along with red pepper flakes, if using. Cook for 5-6 minutes, stirring occasionally, until the tomatoes soften and begin to release their juices, creating a lovely sauce.

        Combine Pasta and Sauce: Add the drained pasta to the skillet with the tomatoes. Pour in the reserved pasta water and balsamic vinegar. Sprinkle in half of the chopped basil and toss everything together until well combined. Season generously with salt and black pepper to taste.

          Add Avocado: Carefully fold in the diced avocado, taking care not to mash the pieces, as you want to maintain their shape. Allow the mixture to rest for about a minute off the heat to slightly warm the avocado.

            Serve: Plate the pasta in individual bowls. Top with the remaining chopped basil, a generous sprinkle of freshly grated Parmesan cheese, and a light drizzle of olive oil. Add extra basil leaves as a beautiful garnish if desired.
