Ingredients

1 pound fresh green beans, trimmed

2 tablespoons vegetable oil

4 cloves garlic, minced

1 inch fresh ginger, finely grated

2-3 tablespoons toasted Szechuan peppercorns

1-2 tablespoons chili paste (adjust based on your desired spice level)

1 tablespoon soy sauce

1 tablespoon oyster sauce

1 tablespoon rice vinegar

1 teaspoon granulated sugar

1/4 cup roasted peanuts (for garnish)

2 green onions, thinly sliced (for garnish)

Optional: 1 tablespoon sesame seeds (for garnish)

Instructions

Prepare the Green Beans: Start by blanching the trimmed green beans. Bring a large pot of salted water to a rolling boil, then add the green beans. Cook them for about 2-3 minutes until they are bright green and still slightly crunchy. After boiling, quickly transfer them to a bowl filled with ice water to stop the cooking process. Once cooled, drain the beans again and set aside.

Heat the Oil: In a large wok or a high-sided skillet, pour in the vegetable oil and heat it over medium-high heat. Wait until the oil shimmers but does not smoke.

Add Aromatics: Once the oil is hot, introduce the minced garlic and grated ginger to the pan. Stir continuously for about 30 seconds, allowing the aromas to develop without letting them burn.

Infuse Spice: Incorporate the toasted Szechuan peppercorns into the oil. Sauté them for about one minute, which will help infuse their unique flavor into the oil.

Stir-fry the Beans: Raise the heat to high, then add the blanched green beans to the wok. Stir-fry the beans for approximately 3-4 minutes, ensuring they get a nice char and remain tender-crisp.

Create the Sauce: In a small bowl, whisk together the chili paste, soy sauce, oyster sauce, rice vinegar, and sugar. Pour this flavorful sauce over the stir-fried green beans and toss vigorously to ensure they are evenly coated. Continue to stir-fry for an additional 2-3 minutes until the sauce thickens and clings to the beans.

Finish and Garnish: Remove the stir-fry from the heat. Transfer the enticing dish to a serving platter, then generously sprinkle with roasted peanuts, thinly sliced green onions, and optional sesame seeds for a delightful crunch.

Serve: Relish your Fiery Szechuan Green Bean Stir-Fry while it's hot, either as a lively main course or a flavorful side dish!
