Easy Peach Yogurt Popsicles

2 large ripe peaches, pitted and diced

1 cup Greek yogurt (plain or vanilla)

1/2 cup honey or maple syrup (adjust based on your sweetness preference)

1/4 cup freshly squeezed lemon juice

1/2 teaspoon vanilla extract (optional)

A pinch of salt

Fresh mint leaves for garnish (optional)

Prepare the Peaches: Rinse the peaches thoroughly under cold water. Slice each peach in half, carefully remove the pits, and chop the flesh into small cubes. For a creamier popsicle, you can also puree the peaches in a blender for a smoother texture.

    Blend the Mixture: In a blender or food processor, add the diced peaches (or puree), Greek yogurt, honey or maple syrup, freshly squeezed lemon juice, vanilla extract (if using), and a pinch of salt. Blend on high speed until the mixture is smooth and well combined. Taste the mixture and adjust the sweetness if needed, adding more honey or maple syrup according to your preference.

      Pour into Molds: Carefully transfer the yogurt-peach mixture into popsicle molds, filling each mold about three-quarters full to allow for expansion as they freeze. If you’d like some extra fruit texture, set aside a few diced peach pieces to stir into the mixture just before pouring.

        Insert Sticks: If your popsicle molds come with sticks, gently insert them right away. If your molds do not have built-in sticks, freeze the popsicles for about an hour until slightly firm, then insert wooden sticks into the center.

          Freeze: Place the filled molds in the freezer, allowing them to freeze for at least 4 to 6 hours, or until they are completely solid.

            Remove from Molds: When you’re ready to serve, run warm water over the outside of the molds for a few seconds, which will help release the popsicles. Gently pull each popsicle out, handling them carefully to avoid breaking.
