1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup grated Parmesan cheese

2 cups fresh spinach, roughly chopped

1 teaspoon Italian seasoning

1 teaspoon salt (plus more for seasoning)

1/2 teaspoon black pepper

2 tablespoons olive oil

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it's hot enough to cook the chicken thoroughly.

    Sear the Chicken: In a spacious skillet, heat 2 tablespoons of olive oil over medium-high heat. Generously season the chicken breasts with salt and black pepper on both sides. Carefully add the chicken to the skillet and sear for about 4-5 minutes on each side, or until they achieve a beautiful golden-brown crust. Once done, remove the chicken from the skillet and set it aside on a plate.

      Prepare the Sauce: In the same skillet, reduce the heat to medium-low. Add the minced garlic and sauté for approximately 30 seconds, stirring frequently until it becomes fragrant. Introduce the chopped sun-dried tomatoes and sprinkle in the Italian seasoning, stirring to combine all the flavors.

        Add Cream and Cheese: Gently pour in the heavy cream and allow it to come to a gentle simmer. Gradually stir in the grated Parmesan cheese, mixing until it's melted and the sauce is creamy and well integrated.

          Incorporate Spinach: Toss the chopped spinach into the sauce, stirring continuously until the spinach wilts and incorporates into the creamy mixture.
