Ingredients

2 cups short pasta (such as penne or fusilli)

1 cup fresh strawberries, hulled and sliced

1 cup fresh blueberries

1 cup diced peaches (can be fresh or canned)

1 cup ricotta cheese

1 cup Greek yogurt

1/2 cup honey

1 teaspoon vanilla extract

1/4 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 cup shredded mozzarella cheese

1 tablespoon olive oil

A pinch of salt

Instructions

Preheat the Oven: Set your oven temperature to 375°F (190°C) to preheat while you prepare the other ingredients.

Cook the Pasta: In a large pot, bring salted water to a rapid boil. Once boiling, add the short pasta and cook according to the package instructions until al dente. This typically takes around 8-10 minutes. Drain the cooked pasta and set aside to cool slightly.

Prepare the Fruit Mixture: In a spacious mixing bowl, combine the sliced strawberries, blueberries, and diced peaches. Use a gentle folding motion to toss the fruit together without bruising, then set aside to allow the flavors to meld.

Mix the Creamy Base: In another mixing bowl, add the ricotta cheese and Greek yogurt. Drizzle in the honey, then add the vanilla extract, cinnamon, nutmeg, and a pinch of salt. Use a whisk to blend all the ingredients until the mixture is smooth and creamy with a rich, sweet aroma.

Combine Pasta and Fruit: In a large baking dish, add the cooked pasta along with the prepared fruit mixture. Gently pour the creamy base over the top. Using a spatula, carefully fold all the ingredients together until everything is well coated and evenly mixed.

Layer with Mozzarella: Sprinkle the shredded mozzarella cheese generously over the top of the pasta and fruit mixture. This will create a deliciously cheesy layer during baking.

Bake to Perfection: Drizzle the olive oil evenly over the cheese layer to help it brown. Place the baking dish in your preheated oven and bake for about 25-30 minutes, or until the cheese is bubbly and turns a light golden brown.

Cool & Serve: After baking, remove the dish from the oven and let it cool for about 5-10 minutes. This will help it set for easier slicing. Serve warm, garnishing with an additional drizzle of honey and fresh mint leaves for a refreshing touch, if desired.
